I was looking for something fresh, quick and easy to make for lunch last weekend and decided to go with a couple of my favorite dishes. I love every single ingredient in these dishes. You really can't go wrong with anything avocado or that has bacon. And throw in some yummy bread and I'm hooked.

Ingredients {Pesto Avocado Feta Tomato Salad}:
- 1 cup Sweet Grape or Cherry Tomatoes
- 1/2 cup Red Pepper
- 2 tbs Pesto
- 1/2 Feta
- Parmesan
- 1 Avocado
Directions:
- Dice tomatoes in half and chop red pepper, placing in mixing bowl
- Add pesto, feta and a dash of parmesan to tomatoes and peppers. Mix well
- Add cubed slices of avocado to tomato mix
- Chill for 20 minutes & Enjoy as a healthy salad
Ingredients {Avocado BLT with Feta}:
- Pesto Avocado Feta Tomato Salad
- 3 Slices of Turkey Bacon
- A handful of Spinach
- Sliced Sourdough or Ciabatta bread {brushed with olive oil}
Directions:
- Brush bread slices with olive oil and toast until desired crisp
- Place spinach on bread
- Add Tomato salad on spinach
- Top with turkey bacon bits
- Enjoy!



Both the salad and the BLT are great with any pasta dish, as a side,
or just on their avocado-y delicious own.
