It's Taco Tuesday y'all and I've said this before and I'll say it again, my family and I love Tacos.
So it is no surprise that I have another taco inspired recipe.
This time, I paired taco greatness with another favorite in my home,
quesadillas.
These taco quesadillas are perfect as a meal, as a side or cut up as an appetizer for any party.
And pretty quick and easy to make, too.
Ingredients:
- 1 pound ground meat {I used turkey}
- 1 packet Taco seasoning
- 1 can black beans, drained
- 8 tortillas
- 1 bag grated Mexican blend cheese
- 1 16oz jar of salsa
Directions:
- Brown ground meat and drain fat, stir in taco seasoning and let cook for 3 minutes
- Add black beans and cook on low heat for 5 minutes
- Place tortillas on two backing sheets and cover with a layer of cheese
- Top cheese with meat/bean mixture
- Add salsa, then top with another layer of cheese... these are quesadillas afterall
- Place a new tortilla on top and place in oven
- Cook at 400 degrees for 9 minutes or until lightly crisp and light brown
- Remove, let sit for 5 minutes, cut into quarters and Enjoy!

Oh these sound great. My kids love kidney beans and tortillas. I wonder if they would go for these too. Will give them a try :)
