Candied Yams & Bacon

I only just tried yams for the first time last year and boy was I missing out! I absolutely love, gotta have them once a week kind of love. So it's safe to say that I've been experimenting with yams to come up with a candied yam recipe that my whole family will love {as much as me} 
and that is healthy.
 I think I've done just that.

  • 1 Yam
  • 2 Tbs Agave
  • Dash of cinnamon 
  • Sea Salt and ground pepper to taste {about 1/2 tsp each}
  • 2-3 strips of turkey bacon

  • Cut yam into cubes
  • Put cut yams into a greased {I used olive oil} baking dish 
  • Add agave, cinnamon, salt and pepper, mixing well
  • Add pieces of turkey bacon on top of yams 
  • Cover with foil and cook for 30 mins at 350 degrees
  • Uncover, stir and cook for an additional 15mins or until slightly crispy
  • Enjoy!!
