Wordless Wednesday Linky {Plus Easter Fun}!!

Over the weekend my kids and I had a couple Easter celebrations to attend and boy was it great! Not only was the weather fantastic {in the high 80s, low 90s) but I managed to get a picture with all three kids and the Easter Bunny!
I'm really looking forward to this coming weekend and a few more Easter egg hunts and parties for the kids...and of course, Easter!

Cheerio Granola Protein Bars {No Bake}

I'm pretty sure I've come down with a serious case of granola bar obsession. No, really! 
I've been experimenting and making homemade granola bars for weeks now {and eating every last bite}. 
It's so fun adding all my favorite ingredients to each new batch and seeing how it turns out. I'll be honest, every time is not always a winner, but I still eat it right up.
Cheerios are my all time favorite cereal and of course peanuts/peanut butter is a major must-have in my house. So for those days when I've had a major work out or I'm craving something slightly sweet and crunchy, these bars do the trick.
And as a side note, not only are these bars loaded with protein from the peanuts and peanut butter, but 1 cup of Cheerios has 3g of protein. 
  • 1 cup Cheerios
  • 1 cup Granola
  • 1/2 cup unsalted peanuts
  • 1.5 cup Peanut Butter {I used unsalted}
  • 3 tbsp Agave 
  • Optional: Shredded Coconut flakes as a topping 
  • Mix Cheerios, granola and peanuts in mixing bowl
  • Heat and melt peanut butter and agave on low heat until thin, about 2 minutes {careful not to burn}
  • Pour peanut butter/ agave mix over Cheerio mix and stir until blended 
  • Cover a 9 x 9 dish with saran wrap and dump mix in dish, pressing to form a hard surface
  • Place in freezer for 1 hour to harden {or in fridge for 2 hours} 
  • Once cool and hard, take out of dish and break apart into chunks.
  • Enjoy!!

Travel: The Rhine Falls, Switzerland

  One of the best parts about where I lived in Switzerland was the fact that the largest plain waterfalls in all of Europe was right in my backyard. Well, about a 5 minutes drive from my house but none the less as exciting. 
The Rhine Falls are located on the Rhine River in the town of Neuhausen, near the city of Schaffhausen {where I lived}, Switzerland.
They are the most beautiful falls I've ever seen and make for a very cool afternoon adventure.

I visited the Rhine Falls numerous times while living so close. I swear everytime someone came to visit us we took them to see and walk around the falls. We also took our visitors on the available boat rides up the Rhine to see the falls up close. It's very exciting to get that close to them. It looks like a thick, white blanket that might be hiding a secret world {at least that's how my kids described it}. 
There are several walking trails, an adventure park, kids playground, restaurants, ice cream stands, gift shops and so much more. Some days I would go just to have a peaceful afternoon or for the kids to have a playdate with friends. You'd think a place like this would always be packed with tourist, however that is not the case. We figured out the best times to go for a relaxing and quiet day at the falls. 

This was Jakob's first time at the Rhine Falls, a wee four days old. My mom was visiting since I had him, so of course I chose this to be little man's first big outing. 
I hope if you're ever in Central Europe you have the opportunity to visit this very beautiful and special attraction.
