So by now I think it's safe to say I like mug cakes. I mean, who doesn't?
They're quick, easy, sometimes healthy, and the kids love them.
I also really like cooking with coconut flour. I'll be honest, almond flour is my preference,
but coconut flour is pretty high up on the list, too.
These coconut flour mug cakes are for those who like the taste of coconut and the fluffiness that coconut flour provides.
Ingredients:
- 1 tbsp Coconut Oil
- 2 tbsp Milk
- 1 Egg
- 2.5 tbsp Coconut flour
- 1/2 tsp Truvia or Stevia
- 1/4 tsp Baking Powder
Directions:
- In an awesome mug, melt coconut oil in microwave for about 10 seconds
- Add cold milk to oil and mix
- Add egg and mix {make sure to add egg after milk}
- Add and mix coconut flour, baking powder and Truvia
- Cook in microwave for 2-2:30 minutes {You want the egg to cook all the way}
- Let sit for a minute and then turn mug over, releasing cake
- Cut and top with your favorite spread or toppings
- Enjoy!
