Simple Pancake {mix} Mug Cake

So the other day I was looking for a quick breakfast for my kids. 
They usually want pancakes before school but I was running low on mix and milk, of course. They didn't really want scrambled eggs but this is what I prefered since they could use the protein. 
I really had to think outside the box with this one and was able to come up with a super quick and easy way to use the ingredients I had and get a lot in return. A thick, moist, eggy muffin for the kids to enjoy and that would fill them up.
 Here's what I did...
Ingredients:
  • 1 Tbsp Butter {melted}
  • 1 Tbsp Milk
  • 1 Egg
  • 3 Tbsp Pancake mix
Instructions:
  • In a mug of your choice, melt butter for 10 seconds.
  • Add milk and stir, cooling the butter a bit.
  • Add egg and stir {don't add egg before milk or the the egg will get chunky}.
  • Add pancake mix and stir all ingredients together.
  • Cook in the microwave for 2 minutes.
  • Pop out on onto a plate and Enjoy with your favorite spread, jelly or even plain!

  2. So simple and yet sounds delicious, I typically don't do many mug recipes but ones in a while we give into them and they are well worth doing.

    1. Yes, do try! Just remember that it can be a bit eggy so if you don't like eggs, do 1/2 an egg and more pancake mix! Enjoy!!

  18. Hi Ashleigh. I cannot remember how I found your blog - a linkup of a linkup, I think. I tried this last week for breakfast. It came out good. I chose a too tall mug and put a bit too much time on the cooking, so I will have to refine this. I will be making this again - thanks for the recipe.

  19. Wow :) This was so quick and yummy. It was my first mug "cake." I was a little disconcerted when the cake grew to be nearly twice the size of the mug, but oh so happy with the light and fluffy result. We topped it with our local honey and it was delicious!
