As I've said in a previous recipe post,
I love yams! Like, make them ALL THE TIME love them {my poor kids}
I didn't start eating yams until recently and I'm making up for lost time.
These yam chips are so dang good and healthy that they are pretty hard to resist.
You can add anything you'd like to the top
but avocado seemed like the best choice. {Ohhh, I should try them with bacon!}
Ingredients:
- 1 Yam
- 2 tsp Sea Salt
- 2 tsp Ground Pepper
- Oil spray
- 1 Avocado
- Cheese sauce or grated cheese of your choice
- Salsa of your choice
Directions:
- Wash yam and slice into thin chips with a knife or mandolin
- Place single layer of chips on baking sheet and spray with oil spray *I used olive oil
- Sprinkle with salt and pepper to taste
- Place in 375 degree oven for 20 minutes, then flip over chips
- Cook for another 20 minutes or until lightly crisp
- *The thinner slices are more likely to burn so keep on eye on them and pull them out when ready
- Dice and lightly mash avocado and season with 1 tsp salt and 1 tsp pepper. Mix
- Once Chips are finished, place on plate and cover with your choice of cheese, salsa, avocado, olives, chives, tomatoes or whatever else you have on hand
- Enjoy!

How funny that I saw this post today - last weekend, I wanted nachos and decided to try it with our homemade sweet potato chips - and loved it! A new regular meal has now been born!
