I think I've made it pretty clear from this post and this one, too, that I love cooking with pancake mix...and why not?? It already has everything you need for baking recipes in it. It not only tastes good but kids will eat pretty much anything made from pancake mix; at least mine will.
If you're ever running low or out of flour, sugar or baking powder but want to bake, use pancake mix. You really can do so much with it.
I was having a major craving for chocolate chip cookies and scones {I can't be the only one?} but didn't have all the ingredients I needed. So I got creative. This recipe has no eggs, milk or oil. It is so easy and tastes so good. My kids were over the moon that I didn't mess this one up, ha...which has happened a time or two while experimenting with baking.
Ingredients:
- 2 cups basic pancake mix
- 1 tsp baking powder
- 1/2 cup salt free butter
- 1/4 yogurt {I used blueberry}
- 1/3 cup chocolate chips {your choice}
Directions:
- Mix dry ingredients in large mixing bowl
- Stir in butter until flakey
- Add in yogurt and stir until dough is formed
- Stir in chocolate chips
- For scone balls, roll dough into 1 inch balls and place on baking sheet (yields 18 scones)
- For traditional scone wedges, cut dough in half and roll each half into a ball
- Press ball into a flat circle on baking sheet and cut into fourths (yields 8 large scones)
- Bake at 350 for 10 minutes
- Let stand for 5 minutes and Enjoy!!

ReplyDeleteI made these after dinner tonight and they were a hit! I added 1/2 tsp of vanilla extract and 1/4 of light brown sugar. Also I sprinkled some sugar on top to give it that slight texture. Overall success!!!
