I'm a huge fan of almonds and right now I can't get enough. I've been trying to incorporate them into as many dishes as possible these days and nothing is off limits. I had bought a bag of sweet cherries in the middle of the week that we were not eating fast enough, so I needed to use them up fast, before they went bad.
I'm so happy with how these biscuits turned out as I've never cooked with cherries before {I know!} or with crushed almonds for that matter. I didn't add anything sweet to these biscuits, as I wanted them more as a breakfast treat rather than a dessert. With that said, I think if you were to add a bit of Agave and butter to this recipe, these biscuits would be a sweet scone... just an idea.
Ingredients:
- 2 1/2 cups Bisquick/ pancake mix or homemade biscuit recipe
- 2/3 cup milk
- 1 tbsp vanilla extract
- 2 drops almond extract
- 1 cup cherries, chopped and pitted
- 2/3 cup crushed almonds
Directions:
- In a large mixing bowl, combine biscuit mix, milk, vanilla and almond extracts, and cherries until thick dough is formed
- In a small bag, using a hammer crush whole almonds until crushed into small pieces
- Using your hands or two spoons, drop 2 inch size dough balls onto a greased baking sheet
- Once all dough has been placed on sheet, sprinkle dough with crushed almonds
- Bake at 450 for 10 minutes or until edges start to turn golden brown
- Take out and let sit for 5 minute, then Enjoy!
