Cashew Butter Mini Pancakes


Oh my goodness, can I just tell you how excited I was to find a whole jar of cashew butter for under 3 Euros here in the Netherlands? Under 3 Euros!! When I found it I kind of went a little crazy and bought way too much and started putting it on EVERYTHING! Wouldn't you?? 

One thing I learned about NL the last time I was here is that they have an abundance of pancakes, of all sizes, at the grocery store. And they are amazing. Of course my kids have been eating them by the dozen, so it only made sense that I add a little {ok, a lot} of cashew butter to make the pancakes even better. And why stop there, when you can add a bit of vanilla ice cream for a late afternoon treat?

These are so darn good, I can't even. I might be addicted at this point. And of course, they are simple to make.

OR if you're not into making it yourself or you don't have a local health food store to get it from, Amazon has a bunch of great brands to choose from. 

Ingredients:

  • Mini pancakes, store bought or homemade
  • Cashew butter, store bought or homemade
  • Vanilla Ice Cream
Instructions:
  • Well, it's pretty darn easy and self explanatory but all you do is apply a generous amount of cashew butter to a mini pancake and add a dollop of ice cream. Oh, and don't forget to Enjoy it!

  14. Welcome to the Netherlands, you hot really lucky on the weather! So funny how differently we eat pancakes in different nations. I don't think I ever added "pindakaas" to pancakes but it looks delicious. So next time I'm gonna give it a go!
