Coconut Flour Chocolate Chip Cookie Mug Cake

Man, have I been craving unhealthy treats as of late! I don't know what is going on with me but I can't turn away from sweets that have been calling out to me. Maybe it's the warm weather or the fact that I don't have to share with the kids since they're in school. Whatever the reasons, my sweet tooth has been active. 

I really wanted to make chocolate chip cookies on Sunday but knew I didn't need the extra sugar or calories. After all, I have been working my butt off {hopefully it is really shrinking} at the gym and don't like sabotaging all my hard efforts. But not one to deny myself a nice treat, I decided to go a bit more healthy and create my own little cookie, in the form of a mug cake. The major benefit to this was that I didn't have to make so many cookies AND it only took 3 minutes to cook {5 minutes total to make}! Plus, as you've probably noticed from past posts, I do love me a good mug cake! 

  • 1 tbsp melted butter
  • 1/2 tsp vanilla extract
  • 2 tbsp water
  • 1 egg
  • 2 1/2 tbsp coconut flour
  • 1/4 tsp baking soda
  • 1 1/2 tbsp chocolate chips
  • In your cutest mug, melt butter in microwave for 15 seconds
  • Add water and vanilla, stir
  • Add egg, stir
  • Add coconut flour and baking soda and combine all
  • Stir in chocolate chips
  • Cook in microwave for 3 minutes
  • Remove carefully {hot!} and let sit for 2 minutes
  • Eat straight from mug or remove from mug and enjoy!!

Ok, so this last month has been so hard for my littlest man and his teething journey. I mean, he went seven months without one new tooth and then wham! six new teeth on top and four new teeth on the bottom, all at the same time. To say he hasn't been struggling is an understatement. And for me, well, let's just say seeing my sweet babe in pain is not so easy either. Thank goodness I picked up a few tricks with my first two babes.

One of my first tricks for relieving teething pain has been putting bananas in the freezer and letting him chew on them {peeled, of course}. Another trick has been giving him a cold, wet washcloth to bite while he's playing. This usually doesn't last long but he gets a kick out of getting the water out with his mouth. Summertime Sadness

Anyone else feeling this overwhelming sadness from the kids going back to school and Summer being nearly over?! I know we still have another month until Fall starts and today it was 105 degrees outside {yes, friggin' miserable here in sunny SoCal} but having to get back on a school routine and not getting to hang with all my littles everyday is a bit of a drag.

I'm really looking forward to baseball and volleyball starting and attending all the school events in the coming weeks. However, today was ridiculously the busiest day since the kids went back. I had back to school night and a baseball team meeting, as well as all the drop offs and pick ups since Heidi is all day and Lukas is in Kinder, starting at different times. I actually left my kids with a friend's sitter {for the first time ever} just so I could attend back to school night without having to chase after Jake. We got home only a half hour before bedtime and I feel like I really missed my kids today, even though I was with them {just not with them} for parts of it. Driving in the car was the only time I really could have our "so, how was school talks."

I'm a scheduler and planner to a T and having all these new activities to add to my calendar is fun and oh so stressful at the same time. I know this is what being a parent is about and time management is super important, but I keep getting these moments of sadness from the changes in our life and I'm pretty sure it's my own personal Summertime blues {either that or my hormones are all messed up lol}. Oh, and to make matters worse, Jake isn't nursing as much and I think I may need to stop breastfeeding for good... like forever and ever. Sigh.

Anywho, I hope I'm not the only one who is missing her babies while they go off and get smart or is having a hard time adjusting to the new schedules or routines in life. I chalk it up to a serious case of Summertime sadness and hopefully once the weather cools and I can actually get the kids in the car without fear of heatstroke, all will be better and blissful.

What's in my Kid's Carry-on

After I returned from my vacation in Europe over the Summer, I had a few people email me about what I had packed in my older two kid's, Heidi 8 and Lukas 5, carry-on luggage. I thought I'd share with everyone since it seems to work for us and I really try not to over pack.  

When traveling far {12 hour flight from Los Angeles to Europe} I don't have Lukas take a carry on. I put all the big kid stuff in Heidi's backpack, that way I only have one other bag besides my own to look after, and let's be honest, you can't fit too much in a 4/5 year old's backpack. 

I've made a list of the top 12 items I put in my kid's carry on luggage, that have really helped me over the years with keeping my kids in check {busy}, protected and healthy while flying. 

1: Light jacket/hoodie and socks: Because it gets cold up there and even though you might be going somewhere warm, you never quite know how cold the plane will get. 

2: Pencil Box: Full of crayons, markers, colored pencils, glue sticks and pens.

3: Coloring books/paper: Entertainment 

4: Books {2 or 3 each}: Entertainment 

5: Tablet: Major Entertainment

6: Headphones: Most long haul flights will pass them out but they don't fit kids very well.

7: Tissue: Just in case.

8: Hand wipes: Because planes are a friggin' germ pool, that's why! 

9: Snacks/Gum: Most long haul flights serve meals and snacks, however, if your kids are like mine, they won't eat it. Make sure to have enough snacks to keep the little's full. Gum is great for relieving ear pressure.

10: Extra Shirt: Kids are messy and accidents DO happen. 

11: Playing cards: At some point the kids will declare they are bored.

12: 1 Choice toy: Just one is enough. There is only so much one bag can hold!

I've started working out *hard again... + Linky!

So, now that we finally figured out where we are living and have gotten the kids settled in school, I have joined the gym again, after a baby and two year break, and really have stepped up my fitness game. I have been working out at home, lifting and running in my neighborhood the whole two years, but I'm the type that really is more successful with my fitness goals in a gym setting {being around other active, fit people motivates me}. I've been back now since last Monday and I'm back to being gym obsessed, for real. Let's just say I haven't worn normal clothes or make up since the 16th lol. I even paid for a year of the gym child care so I could go whenever I wanted. 
So far I've slowly gotten back into my routine and started taking spin, lifting and yoga classes. I'm looking forward to building up my strength again and leaning out. I can feel such a difference in my mood, and I'm sleeping better {shorter but better} which is a huge plus! After three kids, it's time to give my body a much needed shape up! 
What are your fitness goals these days? Do you tapper off towards the end of Summer or start up after the kids are back in school? I know for me, I need to look good for the winter months because I have some serious issues with my legs and pants are like my worst enemy!

White to Bright Room Inspiration

In about 3 weeks time, my family and I will be moving AGAIN but this time it will be back to our home. We left that home 2 years ago when we moved to Switzerland and are really excited to be going back. I'm not so excited about packing everything up again... I mean, the whole organizing and cleaning bit makes me tingle but the moving itself sucks! This will be the third move in two years. On the bright side, I get to paint and redecorate the whole house, yay! 

I'm pretty much starting from scratch and CAN NOT wait to get started. The kids and I have been pinning ideas for months on how each room and back year are going to be decorated. My husband couldn't care less but we are pretty stoked. I know it will keep me busy and give me lots to blog about in the coming months. 

I was so thrilled to make a style board inspired by this cool mid-century chair I found on the Have you heard of this site?? It's a place where you can buy and sell furniture, among other things. You can seriously find any kind of chair on there and there are soooo many styles and colors to choose from, old and new. I had a really hard time narrowing down my pick for this room style board. Once I found this Wood Brazilian Mid-Century chair, it simply called to me. 

The board it suppose to be how I would design my room from white to bright, but to honest, I'm kind of going through a white stage in my life. I've had orange walls and lived in color. I'm more into textures at the moment to really brighten a room up. With that said, it is so easy to add spice to a room with subtle splashes of color here and there, as is the case with the mustard lamps and bright accent pillows. The textured rug and clock, even though white, add so much to the space. And the Brazilian wood used in the accent chair and side table is so beautiful, a room should be designed around them.

I have four bedrooms, an office, three full baths, an eat in kitchen redo, living room, dining room and family room to decorate, so this is only the beginning.
