Man, have I been craving unhealthy treats as of late! I don't know what is going on with me but I can't turn away from sweets that have been calling out to me. Maybe it's the warm weather or the fact that I don't have to share with the kids since they're in school. Whatever the reasons, my sweet tooth has been active.
I really wanted to make chocolate chip cookies on Sunday but knew I didn't need the extra sugar or calories. After all, I have been working my butt off {hopefully it is really shrinking} at the gym and don't like sabotaging all my hard efforts. But not one to deny myself a nice treat, I decided to go a bit more healthy and create my own little cookie, in the form of a mug cake. The major benefit to this was that I didn't have to make so many cookies AND it only took 3 minutes to cook {5 minutes total to make}! Plus, as you've probably noticed from past posts, I do love me a good mug cake!
Ingredients:
- 1 tbsp melted butter
- 1/2 tsp vanilla extract
- 2 tbsp water
- 1 egg
- 2 1/2 tbsp coconut flour
- 1/4 tsp baking soda
- 1 1/2 tbsp chocolate chips
Method:
- In your cutest mug, melt butter in microwave for 15 seconds
- Add water and vanilla, stir
- Add egg, stir
- Add coconut flour and baking soda and combine all
- Stir in chocolate chips
- Cook in microwave for 3 minutes
- Remove carefully {hot!} and let sit for 2 minutes
- Eat straight from mug or remove from mug and enjoy!!
