Man, have I been craving unhealthy treats as of late! I don't know what is going on with me but I can't turn away from sweets that have been calling out to me. Maybe it's the warm weather or the fact that I don't have to share with the kids since they're in school. Whatever the reasons, my sweet tooth has been active.
I really wanted to make chocolate chip cookies on Sunday but knew I didn't need the extra sugar or calories. After all, I have been working my butt off {hopefully it is really shrinking} at the gym and don't like sabotaging all my hard efforts. But not one to deny myself a nice treat, I decided to go a bit more healthy and create my own little cookie, in the form of a mug cake. The major benefit to this was that I didn't have to make so many cookies AND it only took 3 minutes to cook {5 minutes total to make}! Plus, as you've probably noticed from past posts, I do love me a good mug cake!
Ingredients:
- 1 tbsp melted butter
- 1/2 tsp vanilla extract
- 2 tbsp water
- 1 egg
- 2 1/2 tbsp coconut flour
- 1/4 tsp baking soda
- 1 1/2 tbsp chocolate chips
Method:
- In your cutest mug, melt butter in microwave for 15 seconds
- Add water and vanilla, stir
- Add egg, stir
- Add coconut flour and baking soda and combine all
- Stir in chocolate chips
- Cook in microwave for 3 minutes
- Remove carefully {hot!} and let sit for 2 minutes
- Eat straight from mug or remove from mug and enjoy!!

ReplyDeleteI like that this doesn't have a sugar substitute. Cookies with sugar and substitutes usually taste like sweet rather than the flavor they're supposed to have. I'm going to try this. Coconut flour and chocolate chips sound like a great combination.

ReplyDeleteI'm happy to see a cookie that just plain doesn't have sugar. The recipes sugar-free recipes I've tried that call for artificial sugar substitutes are disappointing. I'm curious about the combination of coconut flour and chocolate chips. Can't wait to try this!

ReplyDeleteI just tryed this and so wanted to like it but it was SO dry I threw it out.
ReplyDeleteI also found this pretty dry, and I think it calls for too much baking soda. It rose way over the top of the mug, but then also tasted baking soda-y. Blech. I will try again with less baking soda, or perhaps none at all. I think it might also benefit from a pinch of salt. I do like that it doesn't have any sugar other than the chocolate chips and that it uses a whole egg so I don't have to figure out what to do with the egg white.
