September has arrived and with it comes turning leaves, apple pie, pumpkin spiced lattes and all things Autumn. I think it's safe to say that this time of the year is my fav because of all the wonderful warm, hearty dishes. With Thanksgiving just around the corner {I can hardly believe it!} I have been trying to find and create new recipes to share with my family this season.
Stuffing is a great recipe for all year around but really hits the spot in the Fall months. This sweet stuffing is a new one around here and one the kids love. I used a sweet apple sausage to go with the sweet potato but any sausage will do with this stuffing. I hope you enjoy it as much as we do and have a wonderful start to Fall in the coming weeks.
Ingredients:
- 2 tbsp olive oil
- 12oz sausage *I used Sweet Apple Chicken Sausage with a hint of maple
- 1 cup chopped onion
- 3/4 of 1 sweet potato, cut into small cubes
- 2 large handfuls of spinach
- 6 cups bread crumbs
- 8oz chicken broth
- pinch of sea salt and pepper for flavor
Method:
- Heat oil in a large skillet and cook chopped sausage and onions until brown and caramelized
- Add chopped sweet potato and spinach, cooking for about 5 more minutes until spinach is cooked and potatoes are golden
- In a large mixing bowl, add bread crumbs, sausage mix, chicken broth, salt and pepper, mixing until all is moist
- Put stuffing mix into a greased baking dish and bake at 350 for 30 minutes
- Remove from oven and serve warm. Enjoy!
This sounds so good! I have never had stuffing with sausage in it, and I think the flavor of the apple sausage would be amazing! I would probably add leeks, I always do to stuffing. :)

I usually make a very basic stuffing with just some mixed vegetables but the addition of sausage will really amp up the taste! I have to remember this for next time ;)
