Coconut Banana White Chocolate Mug Cake


Over the weekend, I realized I had too many bananas and not enough willing people to eat them. My kids seem to go through these banana eating spurts, where Jake is asking for 3 a day, Lukas and Heidi each want a few, and I always have one in the morning. It's like you can't give us enough bananas. Then, out of nowhere, everyone stops eating them and I'm left with a bowl full of browning bananas. Not one to let food go to waste, I will use them up however I can. Needless to say, my kids are still getting their daily banana fix, just not in the most traditional way.

I really wanted to get creative. I thought a mug cake would be the best way to use up the remaining bananas {after a hair conditioning mask, a facial mask, and some banana bread lol. I even throw some  extra in my smoothie}. Since I had some coconut flour and left over coconut flakes from another recipe, I thought I'd mix them all together in a delicious, yet healthy-ish, treat. The white chocolate adds just a touch of sweet! 

Ingredients:
  • 1 tbsp melted butter
  • 5 drops almond extract *optional 
  • 2 tbsp water
  • 1 egg
  • 1/2 a mashed banana 
  • 2 1/2 tbsp coconut flour
  • 1/4 tsp baking powder
  • 1 1/2 tbsp white chocolate chips
  • grated coconut for garnish 
What you'll do:
  • In your cutest mug, melt butter in microwave for 15 seconds
  • Add water and almond extract, stir together 
  • Stir in egg 
  • Stir in banana and mash in with ingredients
  • Add coconut flour and baking powder, then combine all
  • Stir in white chocolate chips
  • Cook in microwave for 3 minutes
  • Remove carefully {hot!} and let sit for 2 minutes
  • Eat straight from mug or remove from your mug, garnish with coconut flakes and enjoy!!

  19. We go through a lot of bananas at our house, too. Did you know if you break them all apart from each other (from the bunch) they don't ripen as quickly?

    That being said, THIS sounds like my cup of cake. I love coconut, white chocolate, and banana. Brilliant!
