Pesto Avocado Feta Tomato Salad & Avocado BLT with Feta


I was looking for something fresh, quick and easy to make for lunch last weekend and decided to go with a couple of my favorite dishes. I love every single ingredient in these dishes. You really can't go wrong with anything avocado or that has bacon. And throw in some yummy bread and I'm hooked. 




Ingredients {Pesto Avocado Feta Tomato Salad}:
  • 1 cup Sweet Grape or Cherry Tomatoes 
  • 1/2 cup Red Pepper
  • 2 tbs Pesto
  • 1/2 Feta
  • Parmesan 
  • 1 Avocado
Directions:
  • Dice tomatoes in half and chop red pepper, placing in mixing bowl
  • Add pesto, feta and a dash of parmesan to tomatoes and peppers. Mix well
  • Add cubed slices of avocado to tomato mix
  • Chill for 20 minutes & Enjoy as a healthy salad
Ingredients {Avocado BLT with Feta}:
  • Pesto Avocado Feta Tomato Salad
  • 3 Slices of Turkey Bacon
  • A handful of Spinach 
  • Sliced Sourdough or Ciabatta bread {brushed with olive oil}
Directions:
  • Brush bread slices with olive oil and toast until desired crisp 
  • Place spinach on bread
  • Add Tomato salad on spinach 
  • Top with turkey bacon bits 
  • Enjoy!                            

 

Both the salad and the BLT are great with any pasta dish, as a side, 
or just on their avocado-y delicious own.

Black Bean Taco {Tuesday} Quesadilla

It's Taco Tuesday y'all and I've said this before and I'll say it again, my family and I love Tacos.
So it is no surprise that I have another taco inspired recipe.
This time, I paired taco greatness with another favorite in my home,
quesadillas.
These taco quesadillas are perfect as a meal, as a side or cut up as an appetizer for any party.
And pretty quick and easy to make, too. 
Ingredients
  • 1 pound ground meat {I used turkey}
  • 1 packet Taco seasoning
  • 1 can black beans, drained
  • 8 tortillas 
  • 1 bag grated Mexican blend cheese
  • 1 16oz jar of salsa
Directions:
  • Brown ground meat and drain fat, stir in taco seasoning and let cook for 3 minutes
  • Add black beans and cook on low heat for 5 minutes
  • Place tortillas on two backing sheets and cover with a layer of cheese
  • Top cheese with meat/bean mixture
  • Add salsa, then top with another layer of cheese... these are quesadillas afterall
  • Place a new tortilla on top and place in oven
  • Cook at 400 degrees for 9 minutes or until lightly crisp and light brown
  • Remove, let sit for 5 minutes, cut into quarters and Enjoy!

Travel: Paris, France



Nothing beats the wintertime blues like reminiscing about a springtime walk through downtown Paris.
With mild weather and bright hues of flowers and blooms around every corner,
Paris is Spring is quite the sight to be had.

I was able to bring my mom to Paris 8 years ago as a Mother's day gift and we both fell in love with this vibrant, yet laid-back city, prompting us to make return trips. We were able to see so much of Paris by walking and taking the Metro. Most people wouldn't think this but it's easy to see much of Paris in a day or two, if you plan ahead and make a map of all the sights you want to see. Taking a river cruise on the Seine and utilizing the public transportation is a great way to get around the city {and the traffic} in no time. Stopping in and grabbing some of the yummy French cuisine and fresh pastries is always a good idea. And for a relaxing afternoon, 
just sitting and taking in the sights and sounds of this magnificent city is the best form of enjoyment to be had while in Paris.
