10 Simple Muffin, Scone & Mug Cake Recipes!

I love coming up with new simple recipes that even the most novice of cooks can make. Baking hasn't always been a strong suit of mine in the kitchen, so creating tasty dishes that actually turn out the way I intend them to taste is a major win for me. I've come up with a list of my favorite muffin, scone, and mug cake recipes that I think everyone should be trying! Even if you live in a dorm, are camping, teaching your child how to cook, or a skilled chef looking for an easy, delicious treat, these recipes are sure to deliver.

Oatmeal Pancake Muffins

  • 1 and 1/3 cups Pancake mix (I use store bought bc I just can't get that recipe right)
  • 1 pack Instant Oatmeal, multigrain or apple cinnamon 
  • 1 cup water
  • Granola 
What You'll Do:
  • Mix pancake mix, oatmeal, and water in bowl.
  • Fill cupcake or muffin pan with spaces 3/4 full.
  • Top batter with granola. 
  • Cook at 350 degrees for 16 minutes.
  • This recipe yields 9 muffins.
  • Enjoy! 

Simple Pancake Mug Cake

  • 1 Tbsp Butter {melted}
  • 1 Tbsp Milk
  • 1 Egg
  • 3 Tbsp Pancake mix
What You'll Do:
  • In a mug of your choice, melt butter for 10 seconds.
  • Add milk and stir, cooling the butter a bit.
  • Add egg and stir {don't add egg before milk or the the egg will get chunky}.
  • Add pancake mix and stir all ingredients together.
  • Cook in the microwave for 2 minutes.
  • Pop out on onto a plate and enjoy with your favorite spread, jelly or even plain!

Coconut Flour Mug Cake

  • 1 tbsp Coconut Oil 
  • 2 tbsp Milk
  • 1 Egg
  • 2.5 tbsp Coconut flour
  • 1/2 tsp Truvia or Stevia 
  • 1/4 tsp Baking Powder
What You'll Do:
  • In an awesome mug, melt coconut oil in microwave for about 10 seconds.
  • Add cold milk to oil and mix.
  • Add egg and mix {make sure to add egg after milk}.
  • Add and mix coconut flour, baking powder and Truvia.
  • Cook in microwave for 2-2:30 minutes {You want the egg to cook all the way}.
  • Let sit for a minute and then turn mug over, releasing cake.
  • Cut and top with your favorite spread or toppings.
  • Enjoy!

{Whole Wheat} Cinnamon Granola Scones

  • 2 cups whole wheat flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp light brown sugar
  • 3 tbsp butter
  • 1 cup milk
  • 1/2 tbsp vanilla
  • 2 tbsp melted butter
  • 1 tbsp cinnamon
  • Granola 
What You'll Do: (Heat oven at 400 degrees)
  •  In a large mixing bowl, stir together dry ingredients. 
  • Stir in wet ingredients, mixing all until dough is formed (it will be sticky).
  • Line a baking sheet with foil or parchment paper.
  • Place dough on baking sheet  and flatten with floured hands to desired thickness, making a circle. 
  • Cut dough circle into 8ths.
  • Brush dough with melted butter and cinnamon mixtures using a pastry brush. 
  • Sprinkle granola on top of cinnamon, pressing lightly. 
  • Bake at 400 for 18 minutes or until edges are lightly golden. Take out and let sit for 5 minutes.
  • Enjoy! 

Cherry Almond Biscuits 

  • 2 1/2 cups Bisquick/ pancake mix or homemade biscuit recipe
  • 2/3 cup milk
  • 1 tbsp vanilla extract
  • 2 drops almond extract 
  • 1 cup cherries, chopped and pitted 
  • 2/3 cup crushed almonds
What You'll Do:
  • In a large mixing bowl, combine biscuit mix, milk, vanilla and almond extracts, and cherries until thick dough is formed.
  • In a small bag, using a hammer crush whole almonds until crushed into small pieces.
  • Using your hands or two spoons, drop 2 inch size dough balls onto a greased baking sheet.
  • Once all dough has been placed on sheet, sprinkle dough with crushed almonds. 
  • Bake at 450 for 10 minutes or until edges start to turn golden brown.
  • Take out and let sit for 5 minutes, then enjoy!

Coconut Flour Chocolate Chip Cookie Mug Cake

  • 1 tbsp melted butter
  • 1/2 tsp vanilla extract
  • 2 tbsp water
  • 1 egg
  • 2 1/2 tbsp coconut flour
  • 1/4 tsp baking soda
  • 1 1/2 tbsp chocolate chips
What You'll Do:
  • In your cutest mug, melt butter in microwave for 15 seconds.
  • Add water and vanilla, stir.
  • Add egg, stir.
  • Add coconut flour and baking soda and combine all.
  • Stir in chocolate chips.
  • Cook in microwave for 3 minutes.
  • Remove carefully {hot!} and let sit for 2 minutes.
  • Eat straight from mug or remove from mug and enjoy!!

Pumpkin Caramel Biscuits 

  • 2 1/2 cups of dry biscuit mix
  • 1/2 cup milk
  • 1 cup canned pumpkin
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon vanilla extract 
  • Caramel topping/ syrup 
What You'll Do:
  • In a large mixing bowl, combine dry biscuit mix, milk, pumpkin, cinnamon and vanilla until a thick dough forms.
  • Using a large spoon, spoon dough in two inch "balls" onto a greased or lined baking sheet {I used foil for lining}.
  • Bake at 400 degrees for 9 minutes or until the tops start to turn lightly brown.
  • Let cool for 5 minutes, then drizzle caramel syrup over the biscuits.
  • Give into the temptation and enjoy these pumpkiny treats! 

Coconut Banana White Chocolate Mug Cake

  • 1 tbsp melted butter
  • 5 drops almond extract *optional 
  • 2 tbsp water
  • 1 egg
  • 1/2 a mashed banana 
  • 2 1/2 tbsp coconut flour
  • 1/4 tsp baking powder
  • 1 1/2 tbsp white chocolate chips
  • grated coconut for garnish 
What You'll Do:
  • In your cutest mug, melt butter in the microwave for 15 seconds.
  • Add water and almond extract, stir together. 
  • Stir in egg. 
  • Stir in banana and mash in with ingredients.
  • Add coconut flour and baking powder, then combine all.
  • Stir in white chocolate chips.
  • Cook in the microwave for 3 minutes.
  • Remove carefully {hot!} and let sit for 2 minutes.
  • Eat straight from mug or remove from your mug, garnish with coconut flakes and enjoy!! 

Simple Lemon Almond Seed Scones 

  • 2 cups basic pancake mix
  • 1 tsp baking powder
  • 1/2 cup salt-free butter
  • Three drops almond extract
  • 1/4 yogurt {I used Greek Vanilla}
  • 1/4 cup mixed seeds {I used green pumpkin and sunflower seeds}
  • 1 tbsp lemon zest 
What You'll Do:
  • Mix dry ingredients in large mixing bowl.
  • Add almond extract.
  • Stir in butter until flakey. 
  • Add in yogurt and stir until dough is formed.
  • Stir in seeds.
  • Using a grater, grate in lemon zest... I freeze my lemons to make this process so much easier.
  • For traditional scone wedges, shape dough into a flat circle {think pizza} on a greased baking sheet or foil and cut into eighths (yields 8 large scones)
  • Bake at 350 for 15 minutes
  • Once removed from oven, brush with butter and sprinkle crushed almonds and seeds over warm scones.
  • Let stand for 5 minutes and enjoy!! 

Cookie Butter Breakfast Muffins

  • 2 cups standard pancake mix
  • 1 egg
  • 1 cup cold milk
  • 3 tbsp Cookie Butter Spread 
  • a pinch of cinnamon
What You'll Do: {makes 12}
  • In a large mixing bowl, combine pancake mix, egg, milk, and cookie butter until all ingredients form a thick batter (with no chunks). 
  • Fill each greased muffin pan half way.
  • Bake at 350 for 16 minutes or until muffins start to brown on top.
  • Remove from oven and let cool.
  • Enjoy with cookie butter!
